
For our first Coffee of the Month for 2021 we’re featuring a premium coffee from the south of Colombia.
Based in the Valle de Cauca in the south of Colombia, CENCOIC’s membership is entirely indigenous and consists of Nasa (Paez), Coconuco and Yanacona peoples. The group’s primary focus has always been on protecting indigenous Colombians from political violence, protecting their rights, and providing them with the means to work collectively to increase their incomes. Marketing their primary cash crop of coffee to the fair trade market has been a core activity, as has been income diversification by investment in other crops. Coffee from the south of Colombia has quite a distinctive character, different from that grown in the north of the country, generally being sweeter, lighter and brighter in flavour.
This coffee has a light and sweet fragrance, soft citric acidity, good medium body, caramel, lime and raspberry flavours and a sweet lingering aftertaste.
