Delicious Chai Tea

Mix in a pot:

• 1 tbsp fennel or anise seed
• 6 cardamom pods
• 12 Trade Aid cloves
• 1 Trade Aid cinnamon stick
• 1/2 ginger root, thinly sliced
• 8 Trade IAd black pepper corns
• 2 bay leaves
• 7 cups water

Boil for 5 minutes, then steep for 10. Add 2 tbsp strong Trade Aid organic black tea. Bring to the boil, and simmer for 5 minutes. Next add 6 tbsp honey or brown sugar and 1 cup milk (or soy/ rice milk).
